Breakfast is the most important meal of the day. But as someone who is perfectly happy to start the day with a cup of coffee, integrating breakfast into my life has been a challenge! This breakfast smoothie has been a lifesaver. It's simple, fast, and can be made with several pantry staples.
Eating healthy, home-cooked meals made from real ingredients is a crucial component of a healthy lifestyle. This simple and nourishing vegetarian soup is ready is about 30 minutes, making it one of our go-to weekday meals. Not only is it healthy and packed with plant-based protein, it's dhalicious!
- 1 cup dry red lentils (masoor dal)
- 6 cups water
- 1 tsp turmeric powder
- 1 tsp fresh ginger, graded or finely chopped
- 1 tsp salt
- 2 tbsp ghee
- 1 tsp cumin seed
- 1 tomato, chopped
- 2-3 tbps fresh lemon juice, sliced
- Fresh cilantro to taste
Rinse lentils three times and set aside. Bring water, turmeric, ginger, and salt to boil. Add lentils and cook for 20-30 minutes until lentils are soft and begin to fall apart. Add more water if necessary. As the lentils cook, heat ghee in a small fry pan over medium/high-heat. Add cumin seeds until they pop. Reduce heat to medium and add tomato. Cook for 3-4 minutes or until tomato softens. Set aside. Once the lentils are cooked, add the ghee/tomato mixture and simmer on low heat for 10 minutes. Serve in soup bowls and garnish with fresh lemon juice and cilantro. Serve hot.
